Catering establishments may refuse to share dishes or portions “although this is not best practice”, according to Guidance on Regulations and Best Practice for Catering, published this Friday by the government.
“Since there is no specific standard governing this issue, and although it is not best practice, establishments may choose not to share [de doses ou pratos]as well as charging for this additional service (for the use of dishes, cutlery and their washing), provided that this information is placed in an accessible and visible place and appears in the price list,” says a document prepared by the Attorney General. DGC) and the Association of Hotels, Restaurants and Similar Enterprises of Portugal (AHRESP), published by the Ministry of Economy and the Sea.
Sharing food in restaurants is one of the topics covered in 25 recommendations that are part of the guidance, which is now available online and which “seeks to answer and clarify recurring concerns of consumers and economic agents,” the government said in a statement.
“Traditionally, establishments allow two or more customers to share a dose or dish, which is good commercial practice,” the guide states.
Regarding tipping as an employee’s reward for service rendered, the document emphasizes that this is an optional practice: “the customer decides whether and how much to give, and it is not recommended to offer a tip including this on a cash receipt or price list.”
As for the minimum consumption requirement or mandatory minimum expenditure, the practice is only permitted in food and beverage establishments, premises or areas used for dancing or performances, where “this information must be posted in a conspicuous place near the entrance.” establishments to be visible from the outside.”
Establishments are also required to provide free tap water and disposable cups to customers who drink on-site, but they may refuse this provision or charge per glass of tap water to those who do not consume any product provided by the establishment.
“If the provision of a glass of tap water involves a service on the part of the establishment, a fee may already be charged for it if it is included in the price list,” explains the guide.
