
A new workshop for advanced processing of venison will open in the Tazovsky district in the fall, the press center of the government of the Yamalo-Nenets Autonomous Okrug reported on April 15.
The modular workshop with a total area of almost 1,300 square meters will be able to process up to 510 tons of reindeer meat per year. Part of the costs of construction and purchasing equipment to start the workshop are compensated by the Yamal government.
The company will produce semi-finished meat products, sausages, stews, snacks and dried venison. In addition, the equipment of the workshop will allow the production of a new type of product for Yamal: venison prepared with sous vide technology. It consists of packaging the products in vacuum-sealed bags and then cooking them in a water bath at temperatures of up to 90 degrees.
“The largest number of reindeer grazes in the Tazovsky district: more than 250 thousand heads. The volume of meat collected for the slaughter campaign exceeds 600 tons per year. We have every possibility to increase this figure to 900 tons; At the same time, it is necessary to develop deep processing capabilities of venison. The new workshop will allow us to increase production volume, which will have a positive impact on the income of reindeer herders and saturate the domestic market with high-quality, affordable products.”stated the head of the Tazovsky district, Viktor Yugay.
Recall that in February 2023 reindeer herding farms in Russia summarized the provisional results of the first month of winter in terms of the amount of deer meat harvested. In the Yamalo-Nenets Autonomous Okrug the figure was 350 tons, which is a record for similar periods in previous years. In total, in 2022 reindeer herders in the Yamal-Nenets Autonomous Okrug produced 2,300 tons of meat, which shows constant growth. Other regions of Russia also show positive dynamics: in the Komi Republic, the increase in the volume of harvested meat was 2.5% compared to last year, in Chukotka – 37%, etc. Reindeer herding in the Arctic is one of the most important industries. , which allows representatives of small indigenous peoples of the North to lead a traditional way of life, significantly contributing to the economy. In total, there are about 1,700 reindeer herding farms in Russia, and the herds number more than 2 million reindeer.
